Our Favourite Summer Recipies

With so many Christmas get-togethers and summer holiday parties, it's certain that you'll need to whip up a plate to share a some point- so here's a few of our favourite summery recipes that are easy and delicious!

Disclaimer: these are collected from our own various family recipe books, and if you find a similar recipe somewhere online, let us know, because we might have been using a copied-out version!

Potato Salad

Ingredients:

  • 1 kg potatoes

  • 1 cup mayo

  • 2 tablespoons lemon juice

  • Salt

  • 1 small red onion, finely choppe

Method:

  1. Boil the potatoes.

  2. Combine all the other ingredients together

  3. Add everything together.

Cheddar and Onion Tart

Ingredients:

  • 40g butter

  • 3 brown onions, sliced

  • 2 extra large eggs

  • Salt

  • Pepper

  • 1 cup double cream

  • 1 cup mature cheddar, grated

  • Shortcrust pastry shell, already cooked

Method:

  1. Melt butter in a large pan, cook onions slowly for about 30 mins, stirring occasionally until soft and caramelized. Set aside to cool.

  2. Beat eggs, creams and some seasoning in a medium bowl. Add half the cheese and mix through.

  3. Spread onion mixture evenly across the base of the shell. Pour in egg mixture and sprinkle over remaining cheese.

  4. Bake at 180 degrees celcius for 20-25 mins, or until set and golden.

Chocolate Self-Saucing Pudding

Ingredients:

Pudding

  • 1 cup self-raising flour

  • 3 tablespoons cocoa powder

  • ⅓ cup brown sugar

  • 80g butter, melted, cooled

  • ½ cup milk

  • 1 egg, lightly beaten

  • Thick cream and berries, to serve

Sauce

  • ½ cup raw caster sugar

  • 3 tablespoons cocoa powder

  • 1 ¼ cups boiling water

Method:

  1. Preheat oven to 180 degrees Celsius. Crease an 8-cup capacity ovenproof baking dish. Sift flour and cocoa into a large bowl. Stir in sugar.

  2. Combine butter, milk and egg in a jug. Slowly add to flour mixture whisking until well combined and smooth. Spoon into baking dish. Smooth top.

  3. Make sauce by sprinkling combined sugar and cocoa over pudding.

  4. Slowly pour boiling water over the back of a large metal spoon to cover pudding. Place dish onto baking tray. Bake for 35 to 40 minutes or until pudding bounces back when pressed gently in centre. Serve hot or cold cream and berries, or ice cream if you want!
